A Cirencester couple say they are 'incredibly proud' after being awarded two AA Rosettes.

Brett Russell and Silvia Perez-Alcazar run Tierra and Mar on Sheep Street.

The Spanish influenced eatery has picked up the accolade after four years of culinary excellence.

According to the AA two Rosettes are reserved for 'excellent restaurants that aim for and achieve higher standards and better consistency'.

It also states that: "A greater precision is apparent in the cooking, and there will be obvious attention to the selection of quality ingredients."

Tierra and Mar had previously been nominated for Best Restaurant in the South West.

Head chef Brett and front of house manager Silvia run the restaurant alongside looking after two young children, an 11 month and a five year old.

Other main roles are filled by bar manager Luis Paladines and sous chef Tamás Kvascsuk.

“I am incredibly proud of my team and family for this,” Brett said.

“We have worked tirelessly for this and want to continue to grow as a great place to go and eat and drink.”

Brett is no stranger to awards and top end kitchens, before setting up with Silvia he worked at Michelin recognised venues in England and Australia as well as Restaurante Riff in Valencia, and Es racò D'es Teix in Mallorca.

Current dishes on offer at Tierra and Mar include Octopus a la plancha with sobrasada olive oil mash, grilled cauliflower, spiced cauliflower purée, lemon gel and sobrasada oil while for those with a sweet tooth there is the dessert option of white chocolate ganache with coffee roasted beetroots, pear and hazelnut and coffee crumb.

“We could not help but be influenced by our time in Spain, and Silvia’s family,” Brett added.

“We are not a tapas restaurant but take the Spanish, European style, while using the best we can find to make great tasting or small plates for groups and people to share.”
